tomato salad

we somehow bought the wrong kind of tomatoes to plant this spring.  instead of the big mama's that i like to slice up for hamburgers and sandwiches, we got plum tomatoes.  errrrrr.  and guess who's fault it supposedly is... that's right... mine.  go figure.
but i have made lemonade out of my lemons.  or should i say, tomato salad out of my tomatoes!

this is my new favorite snack.  it's also good as a side dish with a light dinner, or whatever.  i have ate almost all of our tomatoes this way.

first, you make the dressing... 1.5 tablespoons of balsamic vinegar, 1 tablespoon of olive oil, big pinch of sugar, and salt and pepper.  whisk that together so that the olive oil and vinegar aren't separated.  (sorry no photo of that step.)

cut up your tomatoes, and add to the bowl of dressing.  toss a lot, so that they're all coated.
i like to add feta cheese to the top, and lots of it.
and there you have it, my friends!  these directions are how i make a little bowl for a snack (as in the photo above), so if you're serving to others, you need to at least double the dressing recipe.
