as soon as it gets cool outside in the fall, we start making soup! this is probably my favorite soup. i got the recipe from my mom, and it's sooooo easy! enjoy!
Potato Soup
3 lg. potatoes, thinly sliced
4 slices cooked diced bacon
1/4 cup chopped onion
2 T flour
4 c. chicken broth
2 egg yolks, beaten
1 cup sour cream
1 T parsley
Saute bacon and onion; cook 5 minutes. Stir in flour, then add broth slowly while stirring. Add potatoes and simmer 1 hour. Combine egg yolks and sour cream and stir into soup slowly. Simmer 10 minutes. Top with parsley.
i always add shredded cheese to my bowl, and sometimes i add a little to the whole pot! depends on my mood that day. =) i have also doubled the recipe before when i've had people over for dinner.

That sounds wonderful. My kids love potato soup but I have never tried it with the egg mixture in it. This is a keeper!
