clam chowder recipe!

i don't know where my mom found this, but it was great!  and really easy!

Creamy Clam Chowder

1 cup clam juice
2 cups FINELY diced potatoes
1 (6-10 oz.) can minced clams WITH juice
1 cup heavy cream
1/2 teaspoon salt
1 teaspoon freshly ground pepper
1-2 tablespoons cornstarch****

Add the cornstarch to a bit of the clam juice and set aside. Add all other ingredients to a large pot and the add cornstarch mixture. Cook slow until potatoes are tender.
Makes 4 large servings.

****notice the cornstarch... my mom has to eat gluten-free, so we always use cornstarch instead of flour.  if you or anyone you know is interested in eating gluten-free, you can visit her blog here.
