hawaiian chicken pasta salad

this recipe is so easy, and we like things like this for dinner when it's so hot outside!

ashia's hawaiian chicken pasta salad (changed up from the pampered chef's jerk chicken salad)

a small pack of chicken tenders
1 tablespoon olive oil
1 tablespoon seasoning (i used citrus & basil)
1 can pineapple slices
6 slices of bacon, cooked and crumbled
1 bag rotini pasta

2 tablespoons pineapple perserves
1/3 cup of mayo
juice of 2 limes

in a bowl, combine the olive oil, seasoning, and chicken. toss really good to get the seasoning somewhat even on the chicken. grill chicken until done, and in the same grill pan (or whatever you use) grill the pineapple slices. in the meantime, have your pasta boiling until al dente or whatever you like. cut up, or shred the chicken, cut the pineapple into bite size pieces, and add to large bowl. drain pasta and rinse with cold water (unless you want to serve really hot), then add to large bowl, along with the bacon. mix the last 3 ingredients in a separate bowl to make the dressing. (i don't measure these exactly, so you may need to add a little more of each if you like a lot of dressing, like i do.) pour over mixture in large bowl and toss. enjoy hot or room temperature, or cold from the fridge the next day! =)
